Do you know what I really love? Really good comfort food. There's something to be said for carbs and their ability to make us feel full and comfy and cosy inside. These dishes are of particular importance during times of need or when requiring cheering up.
Today I thought I'd share one of my favourite comfort foods, which also happens to be a super fast dish perfect for the lazy cook. We usually save this for evenings when we're super busy, or returning from a trip (the homesickness gets very real, and this helps quite a lot).
What you'll need:
Tesco Chilli and Tomato Pesto
Cream Cheese
Your choice of pasta
Bacon
Cheddar Cheese
Optional extras:
Mushrooms
Pitted/sliced olives
Mozzarella
Parmesan
How to make:
Put pasta onto boil. I usually do two-three bowls of pasta for Dann and I.
Whilst this boils, heat a saucepan with a little oil and add bacon. I tend to cut my bacon into lardon pieces straight into the pan so it cooks faster.
While the bacon cooks, grate the cheddar cheese. We use a good couple of handfuls, but if you're not into cheese, just do enough to put on top.
If you want to add in the mushrooms now, dice and add to the bacon pan to fry off.
Once the pasta is cooked, drain and return to the pan. Add a couple of teaspoonfuls of pesto and mix thoroughly. Add the bacon/mushrooms/olives/mozzarella, and mix.
Grab a spoon, and add a couple of spoonfuls of cream cheese to the mix. This should make a creamy tomato sauce.
Et voila. Your hearty pasta dish, ready in 15 minutes. And not too much washing up either.
This is a staple in our house, so we always have these ingredients in, ready for an emergency dinner!
